The Diamante citron (Italian: cedro di diamante) is a beautiful and very vigorous citrus fruit of Italian origin. Its fruits are quite large and rather elongated. This variety of citron, the best known, takes its name from the town of Diamante, located in the province of Cosenza in Calabria, on the southwest coast of Italy, where this fruit is cultivated. It was almost abandoned by the perfume industry in the 1980s due to its high levels of harmful furocumarins. However, it is now being used again in large quantities in perfumery because it is now possible to eliminate these harmful molecules. Here, the sweet and flavorful facets of the citron are highlighted. Its characteristic fragrance is enhanced by a spicy accord and a musky, woody base.
