Bergamotto di Calabria contains the precious material known as "bergamot sponge." Extraction is always done manually. First, the fruit is cut in half and the pulp is removed by hand using a curved knife. Then, the peel is pressed onto a natural sponge in a circular motion to collect the essence. The accumulated essence is the most delicate and complex, resembling a fruity and floral note of jasmine.
